So Simple, Yet So Good

It's August, which means - TOMATO SEASON!
Get ready for my favorite tomato recipes over the next few weeks.
This week, is my favorite tomato sandwich.

The ingredients are pretty simple:
- Garden fresh tomatoes (red, yellow, or orange)
- Loaf of crusty french bread or sourdough
- Balsamic vinegar
- Extra virgin olive oil
- Shredded Asiago cheese
- Basil spread
- Butter or margarine


First, butter a piece of bread on BOTH sides... then put it on the grill or toaster oven...

... even the George Forman grill works!
Grill on both sides for about 3 minutes - until it's nice and golden.

Then on one side, evenly spread the Basil spread. If you can't find any in the store, you can make your own.
In a food processor combine:
- 4 cups of fresh basil
- 2-4 cloves of garlic
- Splash of lemon juice
- Dash of salt and pepper
- Pour in extra virgin olive oil, while the food processor is going... until you get a nice consistency. Then, spread on bread!

Pour a small amount of extra virgin olive oil and balsamic vinegar over the top of the sandwich.

Sprinkle with Asiago cheese.

Enjoy!!! Trust me, it's sooooo good.
