The Fish Dish You Must Make

Sexy Salmon Dish
This dish is perfect for date night, or a date with the remote and your favorite TV show :)

Ingredients:
1.) 2-3 pieces of salmon
2.) 1/2 pound of jumbo shrimp
3.) 1 box of couscous (I like the roasted garlic & olive oil flavor)
4.) 1 onion
5.) 1 clove of garlic
6.) Extra virgin olive oil
7.) Pitted Kalama olives
8.) 1 teaspoon red pepper flakes
9.) 1 tablespoon oregano
10.) 14.5 ounce can of diced tomatoes
11.) 1 tablespoon of orange zest
12.) 1 tablespoon of lemon zest and lemon juice
13.) Salt & pepper to taste
14.) Parsley (few teaspoons)

** If you don't like salmon or shrimp, you can substitute with whatever seafood you like.
** This usually feeds 2-3 people. Double the recipe for more.

Put 2 tablespoons of olive oil in a saucepan, cook salmon pieces (seasoned with salt and pepper) on each side for 3 minutes. Pull off, and set aside.
After removing the salmon, put 1 tablespoon of olive oil in the same pan, and cook the shrimp for 3-4 minutes. Pull off, and set aside.
Dice the onion and clove of garlic, and put in a pan with 2 tablespoons of olive oil. Cook until the onions turn golden brown.
Zest 1 tablespoon (each) of an orange and a lemon.
Get your couscous ready... follow the directions on the box.
While the couscous is cooking, put your can of tomatoes, handful of kalamata olives, orange and lemon zest, oregano, red pepper flakes, salmon, and shrimp BACK in the pan with the onion/garlic mixture. Squeeze the juice of your lemon on TOP of the mixture.
Let it set on low heat for about 5 minutes.
Once the couscous is done, spoon half of it in a large bowl or on a plate.
Finally... the BEST PART... spoon the fish mixture on TOP of the couscous, and sprinkle with salt/pepper and parsley.
Pour yourself a glass of wine, and ENJOY!!! It is SUPER good.
