A "Soup"er Sunday Dinner!

For those of you who have your own garden, you may be thinking,
"What can I do with all these leftover tomatoes?!"


If so, I have the PERFECT recipe for you...
... homemade tomato soup!

Ingredients:
12 large tomatoes
1/2 cup balsamic vinegar
1 cup extra virgin olive oil
1 large yellow onion
6 cloves of garlic
1 tablespoon oregano
Salt/pepper
4 chicken bouillon cubes
1/2 cup water

1.) Cut up the tomatoes and garlic.
Drizzle 1/2 cup olive oil and 1/2 cup balsamic vinegar on top.
Sprinkle salt/pepper and oregano.
Mix the ingredients together in a large cake pan or baking sheet.

2.) Place in a 500 degree pre-heated oven for 30-35 minutes.


2.) Pull mixture out of the oven.

3.) Cut up the onion and saute in a big sauce pan with 1/2 cup olive oil.

4.) Once the onions are done, add the tomato mixture to the pan.
Add an extra sprinkle of salt/pepper, 4 chicken bouillon cubes, and 1/2 cup of water.


5.) Let the mixture simmer on the stove top for 10 minutes.

6.) Put the mixture in a blender, and combine into a smooth soup.

7.) Put soup back in the sauce pan, and let the flavors mix together for about 10 minutes on low heat.


For a little something to go along with the soup, I suggest some GBG's...
... "green apple, bacon, grilled cheese."

Ingredients:
Bacon
Muenster or cheddar cheese
Dijon mustard
Sourdough bread
Butter
Green apple


1.) Spread dijon mustard on the INSIDES of the bread.

2.) Spread butter on the OUTSIDES.

3.) Add bacon (that's already been cooked), 1 slice of green apple and cheese.

4.) Place in a pan and cook for about 3 minutes on each side.



Finally, grab a beer and sit outside!
I add croutons and shredded parmesan cheese to the soup.
SO GOOD...
... this is one recipe you have to make!
