Chicken Peanut Sesame Noodles

Chicken? Check.
Peanut butter? Check.
Sesame seeds? Check.
Noodles? Check.

This recipe is one of my FAVORITE "go-to meals" during the week... because I typically ALWAYS have the ingredients I need (without having to make a trip to the grocery store!)

Plus, it's SUPER yummy.


This recipe serves FOUR.

What you'll need:
2 cooked chicken breasts
1/2 box of spaghetti, linguine or soba noodles
2 Tablespoons of creamy peanut butter
3 Tablespoons of soy sauce
2 Tablespoons of rice vinegar
1 teaspoon crushed red pepper flakes
1 clove of garlic
Diced cucumber (about 1 cup)
Diced carrots (about 1 cup)
Diced green onions (about 1 cup)
Sesame seeds
Salt/pepper



1.) Salt/pepper both sides of your chicken breasts and cook them until they're done.
(About 5 minutes on each side.)


2.) In a small bowl combine:

- 2 Tablespoons creamy peanut butter
- 2 Tablespoons rice vinegar
- 3 Tablespoons soy sauce
- 1 teaspoon red pepper flakes
- 1 clove of garlic (chopped)



3.) Stir the ingredients together using a whisk!
(Your sauce will come out creamier this way.)



4.) Get a pot of water boiling for your noodles.
Feel free to use spaghetti, linguine or soba noodles.

I happened to have some spaghetti in the pantry... so I used 1/2 the package.
Following cooking directions on the box.


5.) Once the noodles are done cooking, drain them... then add your peanut sauce!
Stir!



6.) Finish off your noodles with some veggies!
I love to add diced cucumber, carrots and green onions.
(But, you could also add celery or broccoli.)


Chop up the veggies... along with your chicken!


7.) Finally...
Garnish the dish with sesame seeds! 


Bam!
Done.
Wasn't that easy???

So simply... and so delicious.
It's take-out food... at home!
