Honey Lime Marinade... super yummy!

When it comes to grilling... 
this recipe has to be my ALL TIME FAVORITE marinade.
It's sweet - with just the right amount of spicy!

But... 
BONUS!


It also pairs nicely with an AWESOME pineapple salsa, 
that is super yummy on top of most types of pork.



Ingredients
(For both recipes)

1 pineapple
Fresh cilantro
1 red onion
2 limes
1 tomato
Honey
1 jalapeno
1 clove of garlic
1/2 cup olive oil
Salt/pepper



Honey Lime Marinade

- Squeeze the juice of 1 lime into a plastic Ziploc bag, also add lime zest.

- Cut up 1 jalapeno (make sure to remove the seeds!) and add to the bag.



- Add 2 tablespoons of honey
- 1/2 cup of olive oil
- 1 clove of garlic
- Salt/pepper

Then, add your meat!
(In this case, we're using pork chops.)



Place in the fridge for about 3-4 hours to marinade.

While that's in the fridge, you can start on your...

Pineapple Salsa Topping

- Cut up 1/2  pineapple
- 1 tomato
- 1/2 a red onion
- 3-4 tablespoons of fresh cilantro
- Squeeze the juice of 1 lime, and also add the lime zest.


Put the salsa in the fridge for about 30 minutes - so all the juices can combine.


One tasty treat - is to put the salsa on tops of HOT DOGS.
Seriously... it's really good!


You could even add some honey mustard to it.


Once the pork chops are done marinating, throw them on the grill
 for about 3 minutes on each side.


Add some sweet corn to the mix too :)


Scoop some of the pineapple salsa on TOP of the cooked pork chops.



Seriously - the entire combination is CRAZY GOOD.
