The Fish Dish You Must Make

Sexy Salmon Dish
This dish is perfect for date night, or a date with the remote and your favorite TV show :)

Ingredients:
1.) 2-3 pieces of salmon
2.) 1/2 pound of jumbo shrimp
3.) 1 box of couscous (I like the roasted garlic & olive oil flavor)
4.) 1 onion
5.) 1 clove of garlic
6.) Extra virgin olive oil
7.) Pitted Kalama olives
8.) 1 teaspoon red pepper flakes
9.) 1 tablespoon oregano
10.) 14.5 ounce can of diced tomatoes
11.) 1 tablespoon of orange zest
12.) 1 tablespoon of lemon zest and lemon juice
13.) Salt & pepper to taste
14.) Parsley (few teaspoons)

** If you don't like salmon or shrimp, you can substitute with whatever seafood you like.
** This usually feeds 2-3 people. Double the recipe for more.

Put 2 tablespoons of olive oil in a saucepan, cook salmon pieces (seasoned with salt and pepper) on each side for 3 minutes. Pull off, and set aside.
After removing the salmon, put 1 tablespoon of olive oil in the same pan, and cook the shrimp for 3-4 minutes. Pull off, and set aside.
Dice the onion and clove of garlic, and put in a pan with 2 tablespoons of olive oil. Cook until the onions turn golden brown.
Zest 1 tablespoon (each) of an orange and a lemon.
Get your couscous ready... follow the directions on the box.
While the couscous is cooking, put your can of tomatoes, handful of kalamata olives, orange and lemon zest, oregano, red pepper flakes, salmon, and shrimp BACK in the pan with the onion/garlic mixture. Squeeze the juice of your lemon on TOP of the mixture.
Let it set on low heat for about 5 minutes.
Once the couscous is done, spoon half of it in a large bowl or on a plate.
Finally... the BEST PART... spoon the fish mixture on TOP of the couscous, and sprinkle with salt/pepper and parsley.
Pour yourself a glass of wine, and ENJOY!!! It is SUPER good.

Personalized Wedding Gift

This past weekend, my friend Aubre and her fiance Jon got hitched in Washington, DC. The wedding was beautiful, and so much fun... which got me thinking... what is a good personalized wedding gift?

This is something I've been doing for my friends and family for YEARS... going out and finding letters in nature that can spell out their last name. These letters spell out "NOWATZKE" - and were taken at my parent's farm for a Christmas present. (You can use colored photos, but I prefer black and white.)











































Find a great frame (one that's long enough) and place them side by side. If you can't find 1 frame with enough openings, use 2 frames... if you have extra openings, you can fill the ends with unique objects like this:

Fun, Funky Storage

Look at how cool these are!
They are from Thomas Wold Furniture. I love the idea of taking different drawers, boxes, desks and vanities, and making them into ONE BIG unit!
If I had my own house, this is one thing I'd be doing! The next time you're at a garage sale or flea market, find different drawers, frames, boxes and make them into your own creation!
With some paint, you never know what you can create!

Match Made in "Brownie/Cookie Heaven"


Do you love brownies? Do you love chocolate chip cookies? Why not put them together to create something TWICE as good?!
This recipe can be found on any Betty Crocker brownie or cookie mix, and it can also be found at Bakerella - an awesome site for treats :)
I made these and fell in love.
They're so easy to make too!

1.) You'll need a box of Betty Crocker brownie mix, and a bag of Betty Crocker Chocolate Chip Cookie mix. Follow the directions on both packages.

2.) Then, put down the brownie mix - and put spoonfuls of the cookie mix RIGHT on top.
3.) Put in a preheated oven at 350 degrees for 35-40 minutes. When they're done, let them cool for 1 hour, then put on chocolate frosting... I prefer Betty Crocker's "Triple Chocolate Fudge Chip"...

The finished product is so yummy!!! Great with a nice glass of cold milk too :)

Pork Chops with Pineapple Salsa

Looking for something tasty to throw on the grill this weekend???
If so, you have GOT to make pork chops with pineapple salsa. I made these a few weeks ago, and they are amazing!!! Props go to the Neely's from the Food Network.
The entire recipe is found here. The pineapple salsa gives the pork chops a sweetness... and the marinade is out-of-this-world GOOD!

Ingredients

Marinade:

  • 1/4 teaspoon lime zest
  • 2 limes, juiced
  • 1 tablespoon honey
  • 1 small shallot, chopped
  • 1 jalapeno, chopped and seeds removed
  • 1 garlic clove, chopped
  • 1/2 cup olive oil
  • Salt

Directions

Pineapple Salsa:

  • 1/2 pineapple, diced and cored, juices reserved
  • 1 tomato, diced
  • 1/2 red onion, minced
  • 1/2 small jalapeno, diced
  • 1 tablespoon chopped cilantro leaves
  • 1 lime, juiced
  • Salt and pepper
  • 4 bone-in, center-cut pork chops

For the marinade:

Blend all the ingredients in a large bowl. Place in a resealable plastic bag and add the pork chops. Marinate in the refrigerator for up to 3 hours.

For the salsa:

Mix all the salsa ingredients in a medium bowl. Taste for seasoning. Set aside for 10 minutes for flavors to meld.

Preheat grill to medium heat.

Remove chops from marinade. Grill for 5 minutes per side for a medium rare and 8 minutes for medium. Remove chops from grill and let rest 10 minutes before slicing. Spoon the salsa on top.

"Fluff Your Stuff"


So, last night, we aired our final "Secret Hot Spot" on FOX 42... ever. Sad day.
I shot another episode ((see SECRET HOT SPOT tab to watch previous episode)) with the re-design group, "Fluff Your Stuff" - where we picked one FOX 42 viewer, and gave them a free room makeover!

It turned out amazing... and our KPTM viewer really did need a makeover!

Gorgeous "Pink" Wedding

Next week, I will be walking down the aisle in Washington, DC... as a bridesmaid in my friend Aubre's wedding.
This March, I'll be doing this same thing... as maid of honor in my best friend Danielle's wedding.

Between both weddings, I have become the "queen" of shopping around wedding blogs for GREAT decorating ideas.
