The return of the "JAR"... this time with cupcakes!

I know how much of a hit the "pie in a jar" was...
... so I thought we'd bring it back - but instead, substitute the pie for CUPCAKES!


This recipe is from an awesome blog called My Cakies.

Red velvet cupcakes are being used here, but you could substitute chocolate, strawberry, vanilla, whatever your little heart desires!

FIRST - you can either use your favorite box of CAKE MIX... or make the cake from scratch.
For the red velvet you'll need:

Cupcake Batter Ingredients:
- 2 1/2 cups all-purpose flour
- 1 1/2 cups sugar
- 1 tsp baking soda
- 1 tsp salt
- 2 1/4 tsp cocoa powder
- 1 1/2 cup canola oil
- 1 cup buttermilk, room temperature
- 2 large eggs, room temperature
- 2 tbsp red food coloring
- 1 tsp white distilled vinegar
- 2 tsp vanilla extract

Cream Cheese Frosting Ingredients:
- 1 pound cream cheese, softened
- 2 sticks butter, softened
- 2 tsps vanilla extract
- 4 cups sifted powdered sugar

1.) Mix the cake batter ingredients together, and bake them in a cupcake pan for 17 minutes at 350 degrees. Then, let them cool completely!


2.) Once the cupcakes are cool, cut them in half.

3.) Put 1 half of the cupcake in your jar, and put your cream cheese frosting (or whatever kind you prefer) in a piping bag... squirt a desired amount on top.
** If you don't have a piping bag, use a Ziploc bag, cut a hole in the corner of the bag, and pipe the icing through that hole. **

4.) Repeat the process with the other top of the cupcake.

5.) Add another shot of frosting.

6.) Then, using a piece of string, attach a spoon to the outside of the jar.
Perfect for a picnic, right?!
** If you're getting married, this could serve as a wedding gift for your guests to take home with them.**
